320-Calorie Crockpot Chicken for the Family

Creamy, comforting, and HEALTHY!


If you are like me you want to be able to make your meals quickly and without too much thought! That is when the beloved crockpot comes into play. I gravitate towards neutrals so much, so this super fun and bright Pioneer Woman crockpot always makes me so happy to pull out of the cabinet!


What's so magical about the crockpot? All you have to do is dump the ingreidnets below in! There's no dirtying dishes (you better be using a crockpot liner!) and no mixing or mashing. Simply throw it in, turn it on, & serve your family a delicious hearty and healthy meal.

INGREDIENTS

  • 1.5LB Boneless, Skinless Chicken Breast

  • 10.5oz. Capbell's French Onion Soup

  • 1/2 Cup Great Value Light Sour Cream

  • 8.5oz. Seeds of Change Quiona & Brown Rice with Garlic Pouch

  • 1/2 White Onion, Chopped

  • Salt + Pepper

STEP ONE

Place chicken in crockpot and cover with all ingredients except for Quiona/Rice blend. Cook on low 3-4 hours or until internal temp of 165*F is reached.


STEP TWO

Here you have the option of microwaving your quinoa pouch and tossing it into the crockpot, mixing it up OR you can microwave your quinoa and get it set int he bottom of your dish, to put the chicken on top of.


STEP THREE

No matter what serving method you used from step 2, pour the remaining crockpot juice on top of your dish and enjoy!

Since there are just two of us (adults) - I saved the other two servings (without any additional crockpot juice added on) and it reheated in the microwave really well! I added a wedge of laughing cow cheese to my leftovers to give it a bit of a different flavor than the original meal.
