Low Carb No Sugar Reese's

I am not THAT naive to know that many healthy recipes taste 'healthy', but I can assure you these mini Reese's cups are one you can get a lot of people on board with! The best part is they are no-bake and minimal ingredients required. One main ingredient in these mini-cups is coconut oil. Coconut oil is high in MCT's -- MCT's provide a rapid energy source, so not only is this treat satisfying, but it's fueling & filing, too!


INGREDIENTS

  • 6TBSP Liquid Coconut Oil (If you don't have liquid, microwave your regular coconut oil until melted down)

  • 1.5 Scoops Chocolate Protein Powder (I use Arbonne)

  • 1-2TBSP Hershey's Cocoa Powder *The more powder you add, the darker the chocolate flavor

  • 2-4TBSP Nut Butter of Choice (peanut, almond, cashew, or sunflower to be nut-free)

    • TIP: To make this treat lower calorie, use PBFIT/PB2 Powder instead, mixed with a bit of water to make a PB consistency

  • 1TBSP Swerve Powdered Sugar

*DID YOU KNOW to achieve the 'Reese's Peanut Butter flavor' you just mix peanut butter with powdered sugar?


DIRECTIONS

  1. Lay 12 mini muffin cups on a flat baking sheet or something flat that can fit into your freezer.

  2. Combine the liquid oil with your protein powder and cocoa powder. In a separate bowl, combine your nut butter and powdered sugar.

  3. Pour 1/2 of the chocolate mixture across each cup.

  4. 'Dollop' a bite size amount of your nut butter mixture in each cup.

  5. Pour remaining 1/2 of chocolate mix over top of cups.

  6. Freeze 1-2 hours before serving. For best results, store in the refrigerator (or freezer) - keeping them out on the counter can cause them to get melty/sticky.


TIP: Add your favorite toppings like sea salt or coconut flakes!
