MY GO-TO LOW CALORIE DESSERT
If you are anything like me, no meal is complete without something 'sweet'. I am always looking for combinations of something I can enjoy and keep it low calorie to align with my health goals!
I am loving making different combinations of these personal-sized pies and my favorite is for sure the salted caramel flavor I created with this one, that hits both salty and sweet! You are going to use the Keebler brand mini pie crusts, which you can find at your grocery store right around the regular pie crusts. 1 crust is only 100 calories!
Once you have your crust, I opt between two fillings - melted Max Mallows or Lite Cool Whip. You can have 2 Max Mallows for just 15 calories, so I like to grab 2-4 and microwave for 18-20 seconds inside the pie crust to melt them down.
Now that you have your crust and filling picked, pick your toppings! For the salted caramel I used 1 serving of this Lily's brand sea salt dark chocolate bar. DID YOU KNOW the darker the percentage of chocolate, the 'better' for you (higher antioxidants)? This bar is 70% dark cocoa, but you can find up to 100% dark cocoa bars, usually on the baking aisle as opposed to with the regular candy/chocolate.
Screenshot the instructions below for this exact recipe or come up with your own! A few of my other favorite personal pie combinations:
Cool whip, Dye-free sprinkles, Lily's or Bake Believe brand white chocolate chips = Birthday Cake
Frozen strawberries run under hot water + cool whip = Strawberry Shortcake
True Lemon Packets + Cool Whip = Lemon Icebox Pie
Let me know what you come up with or if you try a personal pie!
