Muffin Tin Egg Bites
If you are like me, you need something quick and easy for breakfast! The less decisions I have to make before being out the door... the better!
The tricky part that comes into play is finding something fast, delicious, AND healthy! That Is where this egg bite recipe came into play. You can customize each 'bite' (although they are a lot larger than bite size) so they are great to make or prep ahead for the whole family.
At only 25g of protein, and packed with 'good' cholesterol and healthy fats PLUS all of the benefits of the veggies you choose to put in (remember, the more color, the better) this is an energy-producing, mood-boosting breakfast to start your day off GREAT!
I have stored these in the fridge overnight and they reheat well - I would recommend using a fork to poke a few holes in the egg. I baked mine for 20 minutes, but if you wanted your egg a little more cooked through, I would try for 25 minutes.
Let me know what flavor combinations you make! I want to try a 'taco' style next by using green and red bell peppers, fajita seasoning, and fiesta blend cheese mixed in.
