Protein Pancakes Using NO Protein Powder
Take it from a girl who HATES cottage cheese.... you won't taste it!
My baby girl is 7 months old and with that has come so many fun foods to try! I have been so intentional to incorporate a variety of foods, even ones I don't usually eat, to let her try and taste so many flavors and textures. Now that I mentioned the word texture... do you see where this is going?? COTTAGE CHEESE!
I bought a container for her to try, and she did enjoy it, but her 7 month old tummy can't get through an 8oz. tub and mama doesn't like things to go to waste!
That is when the COTTAGE CHEESE PANCAKES were born! This was such a sweet (no pun intended) memory for me to play in the kitchen with her. It was a double bonus that this was something she and I BOTH enjoyed!
I left hers plain and served with some (tiny) chopped strawberries. I topped mine with SWERVE brand confectioners sugar + strabwerry slices. Sugar-free syrup, agave, or honey would have been the perfect add-on for my serving, too!
INGREDIENTS
2 eggs
1/4 Cup Great Value Organic Coconut Flour
1TBSP Vanilla Extract
1/2 Cup Great Value 1% Small Curd Cottage Cheese
Combine all ingredients & mix well, to get rid of any chunks. Add water until you reach desired pancake consistency. Cook in a sprayed skillet on medium heat and flip when side begins to brown.
Top it off
Get creative with the toppings you choose! I think this would be delicious with Lily's brand dark chocolate chips, your favorite nut butter (I like powdered PBFit for a lower calorie peanut butter option), or a blend of different fruits.

The consistency of these pancakes is so fluffy just like your favorite buttermilk pancake recipe! The perk - you get to enjoy it without the added sugar or calories. Not to mention, starting your day with protein is the most sure way to stay full throughout the day! I will always cherish memories I get to make like this with her!
