Spanish Casserole
This recipe is a great mix-up to your typical 'taco night' and with the macros being split for 1/4th of the casserole - you get a high volume (eat a lot, for a little calories) high protein meal! I love that you can switch out different colors of peppers or even different meat to just slightly change the flavor to the exact match you and your family enjoy!

Although the original recipe below calls for just 2 Bell Peppers - I added 3 in the photos shown with some different colors! Did you know that different colors of peppers (or vegetables in general) all offer different nutritional benefits/vitamins/minerals? This is a great dish to get a combination of so many!
If you like the rotel taste in it, you could even add some extra diced tomatoes or maybe some diced onions to really add extra flavor and volume with all of those great veggie benefits!
